  • Egg whites: 40 g
  • Whipping cream: 150 g
  • Asiago Food frozen mixed berries: 350 g
  • Powdered gelatin: 6 g
  • Mint: a few leaves for garnish
  • Powdered sugar: to taste

Mixed berry mousse is an exquisite fruit dessert with an irresistible creaminess.

We will prepare an Italian meringue (cooked meringue) and combine it with whipped cream and a berry sauce to achieve an enveloping and delicate texture.

Mixed berry mousse

Prepare the Italian meringue

In a small saucepan, mix the sugar with the water and bring the mixture to a temperature of 120°C (248°F) to form a syrup.

While the syrup reaches the temperature, whisk the egg whites until stiff peaks form.

When the egg whites become foamy and are almost ready (soft peaks), slowly pour in the hot syrup while continuing to whisk.

This will result in a soft, fluffy, and glossy cooked meringue.

In a separate bowl, whip the cream until it is firm but soft.

Prepare the mixed berry sauce

In a small pot, cook 350 g of Asiago Food frozen mixed berries over low heat for 3 minutes, remembering to set aside a few frozen berries for the final garnish.

During cooking, add the powdered gelatin and, if desired, a little sugar.

Once cooked, blend everything with a mixer until you obtain a smooth sauce.

Assemble the mousse

Combine the whipped cream with the Italian meringue and gradually add the berry sauce, mixing well.

Distribute the mousse into dessert glasses and garnish with the whole berries you set aside, a fresh mint leaf, and a dusting of powdered sugar.

Leave to cool in the fridge for at least 4 hours before serving.
