Sliced porcini mushrooms are the most convenient and versatile. Finding them already cut into wide slices of equal thickness, they will release the least amount of water while cooking, retaining their intense flavor and perfect texture. They are excellent sautéed directly in a pan and enjoyed as a side dish along with a plate of steaming polenta, or as a topping for risottos and tagliatelle. They are also ideal for stuffing pizzas, focaccias, crepes, lasagna and pies.

Porcini mushrooms* (Boletus edulis and related group).

Preparation
Cook before eating. Thawing unnecessary. Quickly rinse the frozen porcini under running water, let them drain and use them in your recipes as you would with fresh mushrooms.
In a frying pan: brown two cloves of garlic in a little olive oil, pour in the porcini slices and cook over a high flame for 7 minutes or according to cooking preference, adding salt and pepper. Season to taste with chopped parsley or herbs of your choice to bring out full flavor.
Try them this way: heat up some olive oil in a large frying pan and sauté garlic and onion. Once the oil is hot, toss in the frozen porcini mushrooms and cook them on high heat, making sure the sauté doesn’t burn. Once the water released by the mushrooms has evaporated, pour in a bit of white wine. Allow the wine to evaporate too, and season with salt and pepper according to your taste. Finish cooking over a medium flame and just before serving, sprinkle some chopped parsley on top.
