{"id":8627,"date":"2025-02-02T15:47:14","date_gmt":"2025-02-02T14:47:14","guid":{"rendered":"https:\/\/www.asiagofood.it\/?p=8627"},"modified":"2025-02-09T10:58:40","modified_gmt":"2025-02-09T09:58:40","slug":"mixed-berry-galette","status":"publish","type":"post","link":"https:\/\/www.asiagofood.it\/en\/recipes\/desserts\/mixed-berry-galette\/","title":{"rendered":"Mixed berry galette"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<ul>\n<li>\n<h4>For the pastry:<\/h4>\n<ul>\n<li>240 g type &#8220;0&#8221; flour (all-purpose), plus more for rolling<\/li>\n<li>40 g granulated sugar<\/li>\n<li>5 g salt<\/li>\n<li>180 g butter, diced and frozen<\/li>\n<li>50 ml ice water<\/li>\n<\/ul>\n<\/li>\n<li>\n<h4><strong>For the filling:<\/strong><\/h4>\n<ul>\n<li>600 g frozen mixed berries<\/li>\n<li>40 g sugar<\/li>\n<li>15 g flour (or corn starch)<\/li>\n<li>lemon zest (from 2 lemons)<\/li>\n<li>20 ml lemon juice<\/li>\n<\/ul>\n<\/li>\n<li>\n<h4><strong>For the egg wash and topping:<\/strong><\/h4>\n<ul>\n<li>1 egg<\/li>\n<li>15 ml milk<\/li>\n<li>25 g granulated or demerara sugar<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h4>Preparation<\/h4>\n<p data-sourcepos=\"1:1-1:129\">Combine the all-purpose flour, sugar, and salt in the bowl of your food processor. Pulse a few times to mix.<\/p>\n<p data-sourcepos=\"3:1-3:340\">Incorporate the very cold butter cubes into the flour mixture. Pulse several times until the butter forms pea-sized pieces. With the processor running, gradually drizzle in the ice water. Be careful not to over-mix: it will be ready when it can be squeezed with one hand into a crumbly and barely cohesive clump.<\/p>\n<p data-sourcepos=\"5:1-5:278\">Place the dough onto a lightly floured surface or pastry mat and knead briefly to help it come together. Gently shape the dough into a disk 2-3 cm thick, wrap it in plastic wrap and refrigerate for about two hours.<\/p>\n<p data-sourcepos=\"7:1-7:102\">In a large bowl, thoroughly combine the frozen berries, lemon zest, lemon juice, sugar, and flour.<\/p>\n<p data-sourcepos=\"9:1-9:234\">Remove the chilled dough from the refrigerator and allow it to rest on the counter for a few minutes to soften slightly. Roll the dough out to a disk about 6-7 mm thick, and transfer it to a baking sheet lined with parchment paper.<\/p>\n<p data-sourcepos=\"11:1-11:162\">Spread the berry filling in the center of the dough, leaving a 5-6 cm border. Fold the edge of the dough up and over the filling, creating pleats.<\/p>\n<p data-sourcepos=\"13:1-13:266\">In a small bowl, whisk together the egg and milk. Brush the edge of the dough with the egg wash, and sprinkle with the sugar.
