{"id":8504,"date":"2025-01-06T17:18:29","date_gmt":"2025-01-06T16:18:29","guid":{"rendered":"https:\/\/www.asiagofood.it\/?p=8504"},"modified":"2025-02-09T13:44:19","modified_gmt":"2025-02-09T12:44:19","slug":"porcini-mushroom-risotto","status":"publish","type":"post","link":"https:\/\/www.asiagofood.it\/en\/recipes\/first-courses\/dried-porcini-mushroom-risotto\/","title":{"rendered":"Dried porcini mushroom risotto"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<ul>\n<li>400 g Carnaroli rice<\/li>\n<li>50 g <a style=\"color: #ac6e44;\" href=\"https:\/\/www.asiagofood.it\/en\/prodotti\/dried-porcini-mushrooms-special-quality-50-g\/?tipologia=per-la-tua-casa\" target=\"_blank\" rel=\"noopener\">dried porcini mushrooms <\/a><\/li>\n<li>50 g butter<\/li>\n<li>1 medium onion or shallot, finely chopped<\/li>\n<li>a splash of dry white wine<\/li>\n<li>1 liter vegetable broth<\/li>\n<li>50 g Parmesan cheese, grated<\/li>\n<li>freshly chopped parsley (or herb of your choice)<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<h4>Preparation<\/h4>\n<p>Prepare the dried porcini mushrooms following the cooking instructions, then drain them, squeeze them dry and chop them roughly.<\/p>\n<p>In a heavy-bottomed pot, saut\u00e9 the onion in butter over gentle heat, until they have softened. Add the mushrooms and let them soak up the flavors of the onion for a few minutes.<\/p>\n<p>Add the rice and let it toast for 2-3 minutes, then add a splash of wine and let that cook off. Now add the broth, ladle by ladle, allowing each ladleful of broth to evaporate before adding the next.<\/p>\n<p>When the rice is nearly cooked (about 20 minutes), take it off heat and add grated Parmesan cheese, freshly chopped parsley, salt and pepper.
