Ingredients:

  • 300 g frozen raspberries
  • 1 L buttermilk
  • 150 g sugar
  • 2 pears
  • 100 vanilla powdered sugar
  • zest of 1 lemon
  • 1 pinch of salt

Peel and dice the pears. Gently rinse the frozen raspberries and set aside a handful for the final decoration. Pour the remaining raspberries into a bowl along with the pears, sprinkle with sugar, and let the fruit rest for at least an hour.

In a saucepan, combine a quarter liter of water, powdered sugar, lemon zest, and salt. Bring it to a boil and let it cook for about 15 minutes. This will result in a syrup.

Blend the syrup with the macerated fruit and add the buttermilk, mixing well.

Transfer the cream to the refrigerator until ready to serve. Spoon the cream into dessert cups, top with the raspberries that were set aside earlier and, if you like, serve with ladyfingers on the side.
