TRADITIONAL ITALIAN RECIPES

Mushrooms can be prepared in a variety of ways. Perfect as pasta- toppers and as a base for risottos, they can easily be added to your favorite meat and fish main course.
First, take a look at some of the more traditional Italian recipes to better understand the numerous ways mushrooms can be prepared.

STIR-FRIED: stir-fry sliced or diced mushrooms in melted butter or heated oil in a frying pan. Add chopped onion or garlic depending on the recipe. Cook over a high flame for the first few minutes to make sure all the excess water evaporates. Use a moderate heat for the rest of the cooking time, stirring every so often until thoroughly cooked. Sprinkle with some parsley the last minute or so to accentuate the dish.

SAUTEED: follow the recipe for stir-fried mushrooms but when you reduce the flame, add a little bit of hot stock to keep them tender. Add salt and pepper and simmer until thoroughly cooked. Sprinkle with some parsley the last minute or so to accentuate the dish. Never add the minced parsley at the beginning of the cooking time- it will make the mushrooms taste bitter.

STEAMED: a process that preserves the original taste of the mushroom. Place mushrooms in a pressure cooker with some water and cook for approximately 8 minutes. Dress with olive oil and a few drops of fresh lemon or use melted butter and sprinkle with minced parsley. Champignons, chanterelles and morels make exquisite dishes when cooked this way.

GRILLED: the original flavor of the mushroom is maintained in this light and delicious recipe. While the grill is heating up, add salt, pepper and a few drops of olive oil to the mushroom caps for flavoring. Place mushrooms on the hot grill. Flip over and grill for a few more minutes, until they are perfectly cooked. Great recipe for barbeques!

BAKED IN FOIL: wrap up some cooked mushrooms with your choice of ingredients using a piece of aluminum foil. Oven-bake or grill them according to the recipe. When finished, slowly open the wrap and discover the tantalizing aroma of freshly baked mushrooms!

AU GRATIN-STYLE: pour panna cream or béchamel white sauce over cooked mushrooms and then sprinkle with bread crumbs. Bake at 300°F for approximately 20 minutes or until a golden crispy surface is formed. An elegant dish for special guests!

DEEP-FRIED: mushrooms make a perfect appetizer or complimentary side dish when cooked in batter. Make sure the pieces are not too thick, otherwise they will not cook well. Dip them in flour or eggs and bread crumbs or batter. Fry until they become a perfect golden color. Use paper towels to absorb excess oil and serve immediately.
