Use mushrooms as fresh. GIve mushrooms a quick rinse and then place in a frying pan with a knob of butter and a little oil. Stir fry for 5 minutes, then reduce the flame for the rest of the cooking time. Add salt, pepper, chopped garlic and some hot broth and simmer over a medium flame for approximately 25 minutes. Add a knob of butter and minced parsley during the last 2 minutes to bring out full flavour.
